Ginger Glaze for Ham


  • 3 sachets Jamaica Mountain Peak Instant Ginger (Unsweetened)
  • 2 tablespoons yellow mustard
  • 1 1/2 cups brown sugar
  • 1 can (20 oz) pineapple slices
  • 1 teaspoon lemon juice


  • Slit the rind of the ham
  • Trim the rind of ham leaving a 1/4″ layer of fat on ham
  • Make diagonal cuts along the surface of the ham on the fat layer, making sure to penetrate the meat
  • Make diagonal cuts in the opposite direction, forming diamond shapes in the fat layer
  • Mix ginger, mustard, pineapple juice (drained from can) and lemon juice in a bowl and brush over ham
  • As the ham cooks, occasionally brush it with extra glaze
